2 cups Powdered Sugar (use Splenda for a low-calorie option)
1/2 cup Butter (margarine or coconut oil for vegan)
1/4 cup Milk (water or plant-based milk can be used)

Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour (or use gluten-free flour) two 8-inch round cake pans, or line with parchment paper.
Step 2: In a large bowl, whisk together the flour (or gluten-free blend), cocoa powder, and baking soda. If using a gluten-free blend without xanthan gum, add 1/2 teaspoon now.
Step 3: In a separate medium bowl, whisk together the sugar (or coconut sugar), eggs (or flax eggs), milk (or plant-based milk), oil (or applesauce), and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Mix until just combined. Be careful not to overmix, as this can lead to a tough cake.
Step 5: Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Step 6: While the cakes cool, prepare the icing.
