  • 5 cups sliced nectarines (about 46 large nectarines)
  • ½ cup granulated sugar
  • ¼ teaspoon cinnamon
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with aluminum foil and lightly coat with cooking spray.
  2. In a food processor, combine flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Pulse until well mixed.
  3. Add cold cubed butter and pulse until mixture forms coarse crumbs.
  4. Add whisked egg and pulse until dough forms. If needed, mix by hand or spatula until combined.
  5. Press a little over half the mixture into the bottom of the prepared dish to form the crust.
  6. Bake crust for 15 minutes until lightly golden.
  7. Meanwhile, in a large bowl, mix nectarine slices, sugar, and cinnamon.
  8. In a separate bowl, whisk cornstarch, lemon juice, and vanilla extract until smooth; pour over nectarines and stir to combine.
  9. Using a slotted spoon, transfer nectarine mixture onto baked crust, avoiding excess juice.
  10. Sprinkle remaining crumble topping over the nectarine filling.
  11. Bake for 40–45 minutes until topping is golden brown and filling is bubbling.
  12. Allow bars to cool completely before cutting into squares and serving.
