- 1 large egg, whisked
- 5 cups sliced nectarines (about 4–6 large nectarines)
- ½ cup granulated sugar
- ¼ teaspoon cinnamon
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with aluminum foil and lightly coat with cooking spray.
- In a food processor, combine flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Pulse until well mixed.
- Add cold cubed butter and pulse until mixture forms coarse crumbs.
- Add whisked egg and pulse until dough forms. If needed, mix by hand or spatula until combined.
- Press a little over half the mixture into the bottom of the prepared dish to form the crust.
- Bake crust for 15 minutes until lightly golden.
- Meanwhile, in a large bowl, mix nectarine slices, sugar, and cinnamon.
- In a separate bowl, whisk cornstarch, lemon juice, and vanilla extract until smooth; pour over nectarines and stir to combine.
- Using a slotted spoon, transfer nectarine mixture onto baked crust, avoiding excess juice.
- Sprinkle remaining crumble topping over the nectarine filling.
- Bake for 40–45 minutes until topping is golden brown and filling is bubbling.
- Allow bars to cool completely before cutting into squares and serving.
