Description

Two easy and delicious appetizers perfect for New Year's Eve: sweet and savory bacon-wrapped dates with goat cheese and fresh tomato basil bruschetta.


Ingredients

16 pitted dates
8 slices bacon, cut in half
1/4 cup goat cheese
1 French baguette, sliced
2 cups cherry tomatoes, diced
2 tbsp olive oil
1/4 cup fresh basil, chopped


Instructions

Step 1: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: For Bacon-Wrapped Dates: Take each pitted date and fill the center with approximately 1/2 teaspoon of goat cheese.
Step 3: Wrap each cheese-filled date with a half slice of bacon. Secure with a toothpick if needed.
Step 4: Place the bacon-wrapped dates seam-side down on the prepared baking sheet. Bake for 20-25 minutes, or until the bacon is crispy and the dates are slightly softened.
Step 5: For Bruschetta: While dates are baking, prepare the bruschetta topping. In a medium bowl, combine the diced cherry tomatoes, 2 tablespoons of olive oil, and chopped fresh basil. Stir gently to combine.
Step 6: Arrange the sliced baguette on a separate baking sheet. Lightly brush or drizzle with a little olive oil.
Step 7: Toast the baguette slices in the preheated oven for 5-7 minutes, or until golden brown and slightly crispy. Alternatively, toast in a toaster or on a grill pan.
Step 8: Once toasted, if desired, gently rub the surface of each baguette slice with a peeled garlic clove for added flavor.
Step 9: To serve, spoon the tomato and basil mixture onto each toasted baguette slice. Serve both appetizers warm or at room temperature.

Notes

For a touch of heat, add a pinch of red pepper flakes to the bruschetta topping. A drizzle of balsamic glaze over the bruschetta just before serving also adds a wonderful tangy-sweet finish.
