Ingredients
- 2 cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup granulated sugar
- 16 oz (450 g) cream cheese, softened

- 3 cups whipped topping, divided (1½ cups + 1½ cups), thawed
- 2 bananas, sliced

Instructions
- Make and chill the crust: Combine graham cracker crumbs, melted butter, and granulated sugar in a medium bowl; stir until moistened. Press mixture firmly into bottom of 9×13-inch dish. Refrigerate at least 15 minutes.
- Beat cheesecake filling: In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla; beat until light and smooth.
- Fold in 1½ cups whipped topping gently to maintain volume. Spread evenly over chilled crust. Refrigerate at least 15 minutes.
- Layer bananas: Arrange sliced bananas evenly over cheesecake layer, pressing gently.
- Add crushed pineapple evenly atop bananas.
- Scatter diced strawberries over pineapple layer.
- Sprinkle mini chocolate chips and chopped nuts over fruit layers if desired.
- Spread remaining 1½ cups whipped topping evenly over fruit and mix-ins; create swirls or peaks if desired.
- Cover loosely with plastic wrap; refrigerate at least 4 hours or overnight for best firmness.
- Before serving, drizzle chocolate syrup over top and arrange maraschino cherries evenly.
- Use a hot, dry knife wiped between cuts to slice neatly.
Notes
To prevent soggy fruit, pat bananas and strawberries dry and drain pineapple thoroughly. Substitute mango or toasted coconut for pineapple for a tropical twist. Use reduced-sugar graham crackers and sugar substitutes for a lower-sugar version. Crust and cheesecake layer can be made up to two days ahead; add fruit layers just before serving. For individual servings, assemble in glasses or jars. Store leftovers covered in refrigerator up to 3 days; avoid freezing to prevent watery fruit.
