Description
A luxurious, no-oven dessert featuring a ladyfinger base, creamy mascarpone filling with Biscoff swirls, and a tart cherry topping.
Ingredients
250 g mascarpone
50 g granulated sugar
8 g vanilla sugar
16 g cream stabilizer
500 ml heavy cream
200 g Biscoff spread, melted
1 pack ladyfingers
100 ml milk for dipping
400 g cherry pie filling
100 g Biscoff cookies, crushed
Instructions
Step 1: Line the bottom of a 9-inch springform pan with a layer of ladyfingers that have been quickly dipped in milk.
Step 2: In a large mixing bowl, combine the mascarpone, granulated sugar, and vanilla sugar, beating until smooth.
Step 3: In a separate bowl, whip the heavy cream with the cream stabilizer until very stiff peaks form.
Step 4: Gently fold the whipped cream into the mascarpone mixture until fully incorporated and light.
Step 5: Drizzle half of the melted Biscoff spread over the ladyfingers, then spread the cream mixture over the top.
Step 6: Spoon the cherry pie filling over the cream and drizzle with the remaining Biscoff spread.
Step 7: Cover and refrigerate for at least 6 hours, or overnight, to allow the pie to set completely.
Notes
Ensure the heavy cream is cold for better whipping. You can substitute ladyfingers with Graham crackers if preferred.
