A decadent, multi-layered no-bake treat featuring a crispy peanut butter base, a gooey caramel center, and a smooth chocolate topping.
Ingredients
3 cups crispy rice cereal
1/2 cup light corn syrup
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 pinch salt
1 cup soft caramel candies
3 tbsp heavy cream
2 tbsp butter
1 1/2 cups semi-sweet chocolate chips
1 tbsp butter or coconut oil
Flaky sea salt (optional)
Instructions
Step 1: Line an 8x8-inch pan with parchment paper, allowing some overhang for easy removal.
Step 2: In a saucepan over medium heat, combine light corn syrup and granulated sugar. Stir until dissolved and beginning to bubble.
Step 3: Remove from heat and stir in creamy peanut butter and salt. Add crispy rice cereal and mix until thoroughly coated. Press firmly into the pan.
Step 4: Melt the caramel candies with heavy cream and butter in a microwave-safe bowl or small saucepan until smooth. Spread over the cereal base and let set for 10–15 minutes.
Step 5: Melt the chocolate chips with 1 tablespoon of butter or coconut oil until smooth. Spread evenly over the caramel layer.
Step 6: Sprinkle with flaky sea salt if using. Chill in the refrigerator for at least 2 hours or until firm.
Step 7: Lift from the pan using the parchment paper and slice into 16 bars.
Notes
Ensure you press the base very firmly to prevent the bars from crumbling when sliced.
