Ingredients
1/2 cup (1 stick) unsalted butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup milk (whole or 2%)
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats
1 1/2 cups shredded unsweetened coconut, toasted
1 cup chopped pecans, toasted
1/2 teaspoon salt
Instructions
Step 1: Line a baking sheet with parchment paper. In a large saucepan, combine butter, granulated sugar, brown sugar, and milk.
Step 2: Bring the mixture to a rolling boil over medium heat, stirring constantly. Boil for exactly 1 minute, then remove from heat.
Step 3: Stir in the vanilla extract, then quickly add the oats, toasted coconut, toasted pecans, and salt. Mix until all ingredients are well combined and coated.
Step 4: Drop spoonfuls of the mixture onto the prepared baking sheet. Work quickly as the mixture will set as it cools.
Step 5: Allow the cookies to cool and set completely at room temperature for at least 1 hour, or chill in the refrigerator for 30 minutes for faster setting.
Step 6: Store in an airtight container at room temperature.
Notes
For an extra touch of richness, a pinch of cinnamon can be added with the vanilla extract. Ensure all ingredients are measured accurately for best results.
