Ingredients
1 cup Sugar
1/2 cup Unsalted Butter
1/4 cup Heavy Cream
1 teaspoon Vanilla Extract
1/2 cup Pecans, chopped
1/2 cup Dried Cranberries
2 cups Rolled Oats
1/2 teaspoon Salt
Instructions
Step 1: Line a baking sheet with parchment paper or wax paper. Set aside.
Step 2: In a medium saucepan, combine the sugar, unsalted butter, and heavy cream. Place over medium heat and bring the mixture to a rolling boil, stirring constantly. Once boiling, allow it to boil for exactly 1 minute without stirring.
Step 3: Remove the saucepan from the heat and immediately stir in the vanilla extract, chopped pecans, dried cranberries, rolled oats, and salt until all ingredients are well combined and coated.
Step 4: Working quickly, drop spoonfuls of the mixture onto the prepared baking sheet. You can use a small cookie scoop or two spoons for uniform size.
Step 5: Allow the cookies to cool completely at room temperature, or chill them in the refrigerator for at least 30 minutes until fully set. Once firm, they are ready to serve and enjoy!
Notes
For the best chewy texture, use old-fashioned rolled oats, not instant or quick oats. Store in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 1 week.
