A refreshing and easy-to-make dessert featuring rich chocolate and cooling peppermint with a satisfying crunch.
Ingredients
2 cups semi-sweet chocolate chips
1/2 cup mint-flavored baking chips
1.5 cups crispy rice cereal or crushed pretzels
1/2 tsp pure peppermint extract
1/4 tsp sea salt
Optional: Green gel food coloring
Optional: 1/4 cup white chocolate for drizzle
Instructions
Step 1: Line a large baking sheet with parchment paper and set aside.
Step 2: In a medium microwave-safe bowl, combine semi-sweet chips and mint chips. Microwave in 30-second intervals at 50% power, stirring until smooth.
Step 3: Stir in the peppermint extract and a drop of green food coloring if using.
Step 4: Gently fold in the crispy rice cereal or pretzels until evenly coated with the chocolate mixture.
Step 5: Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet.
Step 6: If desired, drizzle with melted white chocolate and sprinkle with sea salt.
Step 7: Refrigerate for 45 minutes or until the clusters are completely firm.
