Description
These delightful no-bake mint chocolate chip clusters combine rich melted chocolate, refreshing peppermint, chewy marshmallows, and crunchy pecans for an easy and irresistible treat.
Ingredients
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 ½ cups miniature marshmallows
1 cup chopped pecans
1 teaspoon peppermint extract
½ cup mini chocolate chips for garnish
Pinch of salt
Instructions
Step 1: Line a baking sheet with parchment paper or silicone mats. Set aside.
Step 2: In a large microwave-safe bowl, combine the semi-sweet chocolate chips and white chocolate chips. Microwave on high in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. Alternatively, melt over a double boiler.
Step 3: Remove the melted chocolate from the heat. Stir in the miniature marshmallows, chopped pecans, peppermint extract, and a pinch of salt until everything is well combined and coated in chocolate.
Step 4: Drop spoonfuls of the mixture onto the prepared baking sheet. While the chocolate is still wet, sprinkle the mini chocolate chips over the top of each cluster for garnish.
Step 5: Place the baking sheet in the refrigerator and chill for at least 30 minutes, or until the clusters are firm and set. Once set, store in an airtight container in the refrigerator.
Notes
Feel free to experiment with different nuts like walnuts or almonds, or even use pretzels for an extra salty crunch. For a richer chocolate flavor, use dark chocolate chips.
