Quick and easy no-bake energy bites packed with oats, peanut butter, chocolate chips, M&M's, and marshmallows for a delicious and healthy snack.
Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 teaspoons vanilla extract
1/4 teaspoon salt
1 1/2 cups quick oats
1 cup chocolate chips
1/2 cup M&M's
1/2 cup mini marshmallows
Instructions
Step 1: In a large bowl, combine creamy peanut butter, softened unsalted butter, granulated sugar, brown sugar, vanilla extract, and salt. Mix thoroughly until smooth and well-combined.
Step 2: Add the quick oats to the mixture. Stir until the oats are fully incorporated and the dough is thick and slightly sticky.
Step 3: Gently fold in the chocolate chips, M&M's, and mini marshmallows until evenly distributed throughout the dough. Avoid overmixing.
Step 4: Scoop out portions of the dough (about 1-inch in diameter) and roll them into compact balls. Place them on a baking sheet lined with parchment paper.
Step 5: Refrigerate the energy bites for at least 30 minutes to allow them to firm up and set properly.
Step 6: Once chilled and firm, enjoy your no-bake monster energy bites immediately. Store any remaining bites in an airtight container in the refrigerator for up to a week.
