A creamy, refreshing tropical cheesecake featuring swirls of orange and pineapple in an easy no-bake format.
Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
24 oz full-fat cream cheese, softened
1 cup powdered sugar
1.5 cups cold heavy whipping cream
1 tablespoon orange zest
1 teaspoon orange extract
1/2 cup crushed pineapple, very well drained
Instructions
Step 1: Mix graham cracker crumbs, melted butter, and sugar; press into a 9-inch springform pan and freeze.
Step 2: Beat softened cream cheese and powdered sugar until completely smooth and creamy.
Step 3: Divide the mixture into two bowls; add orange zest and extract to one, and drained pineapple to the other.
Step 4: Whip heavy cream to stiff peaks and fold half into each bowl.
Step 5: Dollop alternating flavors onto the crust and swirl with a knife.
Step 6: Refrigerate for at least 8 hours or overnight until fully set.
Notes
Ensure the pineapple is extremely well-drained to prevent the cheesecake from becoming runny.
