Description

A creamy, dreamy mint-vanilla pie that captures the iconic flavors of the seasonal Shamrock Shake in an easy no-bake dessert form.


Ingredients

1 graham cracker or shortbread pie crust
2 packages (3.4 oz each) vanilla pudding mix
2 cups cold milk
1 8 oz container whipped topping (Cool Whip), thawed
1/2 teaspoon peppermint extract
16 drops green food coloring


Instructions

Step 1: In a large mixing bowl, whisk together the two packages of vanilla pudding mix and the two cups of cold milk for two minutes until thickened.
Step 2: Stir in the peppermint extract and green food coloring until the color is uniform.
Step 3: Gently fold in three-quarters of the whipped topping using a rubber spatula until combined and fluffy.
Step 4: Pour the mixture into the pie crust and smooth the top.
Step 5: Spread the remaining whipped topping over the filling.
Step 6: Chill in the refrigerator for at least 4 hours (preferably overnight) before slicing and serving.

Notes

Ensure the milk is very cold for the pudding to set correctly. For a cleaner look, use a piping bag for the whipped topping.
