1/4 cup shredded coconut (optional, for topping)

Instructions

Step 1: In a large mixing bowl, combine the crushed Nutter Butter cookies, softened cream cheese, powdered sugar, and vanilla extract. Mix thoroughly using an electric mixer or a sturdy spoon until the mixture is smooth and creamy.
Step 2: Roll the mixture into small, bite-sized balls, approximately 1 inch in diameter. Arrange these balls on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for at least 30 minutes to firm up the truffles. This is crucial for easy dipping.
Step 3: While the truffles are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat.
