Description
A dense, tangy cake-style donut bar fried to golden perfection and dipped in a luxurious brown butter and maple vanilla bean glaze.
Ingredients
3 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp ground nutmeg
3/4 cup buttermilk
4 tbsp unsalted butter, melted
2 large eggs
1 qt vegetable oil (for frying)
1/2 cup unsalted butter (for glaze)
1 1/2 cups powdered sugar
1/4 cup pure maple syrup
1 whole vanilla bean, scraped
Instructions
Step 1: Whisk together flour, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl.
Step 2: In a separate bowl, whisk the buttermilk, melted butter, and eggs until smooth.
Step 3: Incorporate the wet ingredients into the dry ingredients, stirring just until a soft dough forms.
Step 4: Pat the dough into a rectangle on a floured surface and cut into 1x4 inch bars using a chef's knife.
Step 5: Heat oil in a Dutch oven to 350°F. Fry bars in batches for 2 minutes per side until golden brown.
Step 6: To make the glaze, melt butter in a saucepan over medium heat until brown bits form. Whisk in maple syrup, vanilla bean seeds, and powdered sugar.
Step 7: Dip the warm donut bars into the glaze and set on a wire rack to firm up before serving.
Notes
Ensure the butter is properly browned for the glaze—it should have a nutty aroma and dark amber specks.
