Ingredients
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon

1/2 tsp salt
1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
4 large eggs
1 cup vegetable oil
1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
4 cups powdered sugar, sifted
1 tsp vanilla extract
1-2 tbsp milk or cream (if needed for consistency)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 15x10 inch (jelly roll) baking pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
Step 3: In a separate large bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and pumpkin puree. Beat until smooth and well combined.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
Step 5: Pour the batter evenly into the prepared baking pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Let the pumpkin bars cool completely in the pan on a wire rack before frosting. This is crucial to prevent the frosting from melting.
