Description

A hearty and flavorful one-pan bake featuring tender chicken, crispy bacon, savory potatoes, and melted cheese, all seasoned with a delicious ranch sauce.


Ingredients

5 medium potatoes (Yukon Gold or Russet), diced into 1-inch cubes
2 cups cooked chicken, shredded or diced
8 slices bacon, cooked crispy and crumbled
1 cup ranch dressing
1/2 cup sour cream
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper to taste
1.5 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons chopped green onions or fresh parsley, for garnish


Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the diced potatoes, cooked chicken, and crumbled bacon.
Step 3: Add the ranch dressing, sour cream, garlic powder, onion powder, salt, and pepper to the bowl. Stir well until all ingredients are evenly coated.
Step 4: Spread half of the chicken and potato mixture into the prepared baking dish.
Step 5: Sprinkle half of the cheddar cheese and half of the mozzarella cheese over the mixture.
Step 6: Top with the remaining chicken and potato mixture, spreading it evenly.
Step 7: Sprinkle the remaining cheddar and mozzarella cheese over the top layer.
Step 8: Bake for 25-30 minutes, or until the potatoes are fork-tender and the cheese is bubbly and golden brown. If desired, broil for an additional 1-2 minutes for extra crispiness on top, watching carefully to prevent burning.
Step 9: Remove from oven and let the casserole rest for 5 minutes before serving.
Step 10: Garnish with fresh chopped green onions or parsley, and an optional drizzle of extra ranch dressing before serving.

Notes

For a leaner option, use turkey bacon and reduced-fat cheese. You can also add a pinch of smoked paprika for extra depth of flavor.
