Ingredients
1 lb boneless, skinless chicken breasts, diced
1 cup long-grain white rice, rinsed
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1 medium onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 cup corn, frozen or canned
2 cups chicken broth
1 cup salsa
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste
Instructions
Step 1: Heat oil in a large skillet over medium-high heat and sauté diced chicken until browned.
Step 2: Add onion and bell pepper, cooking until softened, then add garlic.
Step 3: Stir in the rinsed rice and spices, toasting for 2 minutes.
Step 4: Pour in chicken broth, salsa, beans, and corn; stir and bring to a boil.
Step 5: Reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed.
Step 6: Stir in cream cheese and top with cheddar cheese; let melt before serving.
Notes
Ensure rice is thoroughly rinsed to prevent a gummy texture. Use mild salsa if cooking for children.
