Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1 tsp ground cardamom
1/2 tsp salt
2 large eggs, room temperature
1/2 cup unsalted butter, melted
1/2 cup fresh orange juice
1 tbsp fresh orange zest
1/2 cup whole milk
1 tsp vanilla extract
Instructions
Step 1: Preheat oven to 425°F and line a muffin tin with paper liners.
Step 2: Whisk flour, sugar, baking powder, cardamom, and salt in a large bowl.
Step 3: Rub orange zest into the dry mixture using your fingertips until fragrant.
Step 4: In another bowl, whisk eggs, melted butter, orange juice, milk, and vanilla.
Step 5: Fold wet ingredients into dry until just combined; do not overmix.
Step 6: Scoop batter into muffin cups, filling almost to the top.
Step 7: Bake at 425°F for 5 minutes, then reduce to 375°F and bake for 15 more minutes.
Step 8: Let cool in the pan for 5 minutes before transferring to a wire rack.
