Description
A moist and fragrant cake made with Medjool dates, fresh orange zest, and aromatic cardamom, finished with a golden honey drizzle.
Ingredients
1.5 cups Medjool dates, pitted and chopped
1 cup boiling water
1/2 cup fresh orange juice
1 tablespoon orange zest
1 3/4 cups all-purpose flour
1 teaspoon ground cardamom
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/4 cup honey (for drizzling)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan or cake tin.
Step 2: In a small bowl, combine chopped dates, boiling water, and orange juice. Let sit for 15 minutes to soften the dates.
Step 3: In a medium bowl, whisk together the flour, ground cardamom, baking soda, and salt.
Step 4: In a large bowl, cream the softened butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the orange zest.
Step 5: Fold the dry ingredients into the wet ingredients, alternating with the soaked date mixture (including the liquid). Mix until just combined.
Step 6: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
Step 7: Allow the cake to cool for 10 minutes, then drizzle the warm honey over the top before serving.
Notes
For best results, use fresh cardamom pods and grind the seeds yourself. The cake is even better the next day!
