Description

A vibrant and fluffy buttercream icing infused with the nostalgic flavors of an orange creamsicle, perfect for cakes and cupcakes.


Ingredients

1/2 cup unsalted sweet cream butter, softened
4 1/2 cups powdered sugar
1 teaspoon orange zest
2 teaspoons flattened orange soda
1 teaspoon vanilla extract
2 tablespoons freshly squeezed orange juice
2 tablespoons heavy whipping cream
1-3 drops orange food coloring (optional)


Instructions

Step 1: In the bowl of a stand mixer fitted with a paddle attachment (or using a hand mixer), cream the softened butter on medium speed for 2-3 minutes until light and fluffy.
Step 2: Gradually add the sifted powdered sugar, 1 cup at a time, mixing on low speed until combined after each addition. Scrape down the sides of the bowl as needed.
Step 3: Add the orange zest, flattened orange soda, vanilla extract, and freshly squeezed orange juice. Mix on low speed until just incorporated.
Step 4: Pour in the heavy whipping cream. Increase the mixer speed to medium-high and beat for another 3-5 minutes until the buttercream is light, airy, and fluffy.
Step 5: If desired, add 1-3 drops of orange food coloring and mix until the desired hue is achieved. Do not overmix.
Step 6: Use immediately to frost your favorite cakes, cupcakes, or cookies. If not using right away, store as directed in the blog post notes.

Notes

Ensure butter is truly at room temperature for the best consistency. To 'flatten' orange soda, simply open it a few hours before starting to let the carbonation dissipate. If your buttercream is too thick, add a tiny bit more heavy cream; if too thin, add more powdered sugar, a tablespoon at a time.
