Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup almond milk
  • Zest of 2 oranges
  • 1/2 tsp ground saffron
  • Powdered sugar for dusting (optional)
  • Sliced almonds for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract, orange zest, and ground saffron.
  6. Gradually add dry ingredients to wet ingredients, alternating with almond milk; mix just until combined.
  7. Pour batter into prepared cake pan and smooth top with spatula.
  8. Bake 40-45 minutes or until toothpick inserted in center comes out clean.
  9. Cool in pan 10 minutes, then transfer to wire rack to cool completely.
  10. Optional: Dust with powdered sugar and garnish with sliced almonds.
  11. Serve at room temperature.

Notes

Preheat oven properly for even baking. Fold dry ingredients gently for tender texture. Customize with almond extract or cardamom. Substitute lemon zest for orange zest if desired. Use regular or coconut milk as alternative to almond milk. For healthier version, use whole wheat flour and reduce sugar.
