Ingredients
4 (6-ounce) cod fillets
1/2 cup Panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
2 tablespoons unsalted butter, melted
1 tablespoon lemon zest
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for the pan)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and grease a large baking sheet with olive oil.
Step 2: Pat the cod fillets dry with paper towels to remove all excess moisture.
Step 3: In a small bowl, mix the Panko, Parmesan, lemon zest, garlic powder, parsley, and melted butter.
Step 4: Season the cod with salt and pepper, then place them on the baking sheet.
Step 5: Press the Parmesan mixture firmly onto the top of each cod fillet.
Step 6: Bake for 12-15 minutes or until the fish reaches an internal temperature of 145°F and the crust is golden brown.
Notes
Ensure the fish is dry before adding the topping. Use fresh Parmesan for the best melting properties and flavor profile.
