Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tsp vanilla extract
2.5 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter (for frosting)
2 cups powdered sugar
1-2 tbsp milk
Pastel gel food coloring
Instructions
Step 1: Cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy.
Step 2: Mix in the egg and vanilla extract until fully combined.
Step 3: In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet ingredients.
Step 4: Divide dough, wrap in plastic, and chill for at least 1 hour.
Step 5: Preheat oven to 350°F. Roll dough to 1/4 inch thickness and cut into circles.
Step 6: Bake for 8-10 minutes. Let cool completely.
Step 7: Beat frosting ingredients together, add pastel colors, and sandwich between two cooled cookies.
Notes
Ensure cookies are completely cool before filling to avoid melting the buttercream.
