Ingredients

  • Homemade all-butter pie crust
  • Fresh yellow peaches, peeled and cubed
  • Lemon or lime juice
  • Granulated sugar
  • Tapioca starch
  • Vanilla extract
  • Smoked paprika
  • Unsalted butter
  • Egg yolk
  • Milk

Instructions

  1. Roll out first pie dough disc and fit into a 9-inch pie dish.
  2. Peel peaches and cut into 1-inch cubes.
  3. In a large bowl, mix peaches, lemon or lime juice, sugar, tapioca starch, vanilla extract, and smoked paprika until combined.
  4. Pour filling into pie crust and dot with unsalted butter.
  5. Roll out second dough disc and cut into strips to create a lattice top.
  6. Place lattice over filling and crimp edges to seal.
  7. Beat egg yolk with milk and brush over lattice; sprinkle with sugar.
  8. Bake at 400°F (200°C) for 40-50 minutes until filling bubbles and crust is golden; cover with foil if crust browns too fast.
  9. Cool pie for 2-3 hours before serving to set filling.

Notes

Use fresh peaches for best texture; thaw and drain frozen peaches well if used. Chill dough before rolling for flakier crust. Add butter dots to prevent bubbling over. Let pie cool fully before slicing to allow filling to set.
