- 2 cups fresh watermelon, cubed
- 2 ripe peaches, sliced
- 1 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced (optional)
- Fresh mint leaves, for garnish
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey (or maple syrup for a vegan option)
- Salt and pepper, to taste
Instructions
- Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
- Wash and slice the peaches, removing the pit. Add the peach slices to the bowl with the watermelon.
- If using, thinly slice the red onion and add it to the bowl.
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the watermelon and peach mixture. Gently toss to combine.
- Sprinkle crumbled feta cheese over the top and gently mix.
- Garnish with fresh mint leaves and serve immediately.
Notes
For extra crunch, add toasted almonds or walnuts. Swap feta with a plant-based alternative for a vegan version. Try adding basil or cilantro for herbal variation. Best served fresh, but can be refrigerated up to 2 days.
