Ingredients

  • 2 cups fresh watermelon, cubed
  • 2 ripe peaches, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced (optional)
  • Fresh mint leaves, for garnish
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey (or maple syrup for a vegan option)
  • Salt and pepper, to taste

Instructions

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Wash and slice the peaches, removing the pit. Add the peach slices to the bowl with the watermelon.
  3. If using, thinly slice the red onion and add it to the bowl.
  4. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  5. Drizzle the dressing over the watermelon and peach mixture. Gently toss to combine.
  6. Sprinkle crumbled feta cheese over the top and gently mix.
  7. Garnish with fresh mint leaves and serve immediately.

Notes
