Ingredients
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
12 oz semi-sweet chocolate chips
1 tablespoon coconut oil
Instructions
Step 1: Combine the creamy peanut butter and softened butter in a large mixing bowl and beat until smooth.
Step 2: Add vanilla extract and salt, then gradually mix in the powdered sugar until a stiff dough forms.
Step 3: Shape the dough into 1-inch egg-like ovals and place them on a parchment-lined baking sheet.
Step 4: Freeze the peanut butter eggs for at least 45 minutes until very firm.
Step 5: Melt the chocolate chips and coconut oil together in the microwave, stirring every 30 seconds until smooth.
Step 6: Dip each chilled egg into the chocolate using a fork, allow excess to drip off, and return to the tray to set.
Notes
Use high-quality chocolate for the best results. If the dough is too crumbly, add a teaspoon of milk.
