Description

A nostalgic, chewy, and creamy no-bake cookie packed with rich peanut butter flavor and hearty oats.

Ingredients

Scale

2 cups granulated sugar
1/2 cup salted butter
1/2 cup whole milk
3/4 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats

Instructions

Step 1: Line two large baking sheets with parchment paper or wax paper and set aside.
Step 2: In a medium saucepan, combine the sugar, salted butter, and milk over medium-high heat.
Step 3: Bring the mixture to a full rolling boil, stirring constantly to prevent burning.
Step 4: Once the boil is established, boil for exactly 90 seconds, then remove from heat immediately.
Step 5: Stir in the creamy peanut butter and vanilla extract until the mixture is smooth.
Step 6: Fold in the quick-cooking oats until they are thoroughly and evenly coated with the syrup.
Step 7: Drop by rounded tablespoons onto the prepared baking sheets and let cool until firm (about 30 minutes).

Notes

Ensure you time the boil exactly for the best set. Use quick oats for a softer texture.
