Double the peanut butter goodness with soft, chewy cookies and a creamy, sweet peanut butter filling.
Ingredients
1 cup salted butter, room temperature
1 cup creamy peanut butter
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
3 large eggs
4 cups all-purpose flour, lightly spooned and leveled
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup creamy peanut butter (filling)
3 cups powdered sugar (filling)
1 teaspoon vanilla extract (filling)
5-6 tablespoons 2% milk (filling)
Instructions
Step 1: Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2: Cream together butter, 1 cup peanut butter, and both sugars until light and fluffy.
Step 3: Beat in eggs one at a time, then stir in vanilla extract.
Step 4: In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
Step 5: Roll dough into 1.5-inch balls and place on baking sheets.
Step 6: Bake for 10-12 minutes until edges are golden. Cool completely on a wire rack.
Step 7: For the filling, beat peanut butter, powdered sugar, vanilla, and milk until smooth.
Step 8: Sandwich a generous amount of filling between two cooled cookies.
Notes
Ensure cookies are completely cool before filling to prevent the frosting from melting. For a saltier kick, sprinkle a tiny bit of Maldon sea salt on the filling before closing the sandwich.
