Moist, tender, and beautifully spiced, these cake bars feature fresh pears and aromatic cardamom for a sophisticated autumn treat.
Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground cardamom
1 teaspoon baking powder
1/4 teaspoon salt
2 medium pears, peeled, cored and diced into 1/2-inch pieces
Optional: 1 tablespoon turbinado sugar for topping
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease an 8x8 inch square baking pan or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, ground cardamom, baking powder, and salt until well combined.
Step 3: In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
Step 4: Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 6: Gently fold in the diced pears using a spatula.
Step 7: Spread the batter evenly into the prepared baking pan. If desired, sprinkle the top with turbinado sugar for a crunchy finish.
Step 8: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden.
Step 9: Allow the bars to cool completely in the pan on a wire rack before cutting into squares.
Notes
For best results, use pears that are ripe but still firm to the touch.
