A moist and fragrant quick bread featuring fresh pears and the floral notes of cardamom.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cardamom
2 large eggs, room temperature
1/2 cup vegetable oil
1/2 cup plain Greek yogurt
1 teaspoon vanilla extract
2 cups diced fresh pears (about 2-3 medium pears)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
Step 2: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cardamom until well combined.
Step 3: In a separate medium bowl, beat the eggs lightly, then stir in the vegetable oil, Greek yogurt, and vanilla extract until the mixture is smooth.
Step 4: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula until just combined; do not overmix.
Step 5: Gently fold in the diced pears until they are evenly distributed throughout the batter.
Step 6: Pour the batter into the prepared loaf pan and spread it evenly.
Step 7: Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
Step 8: Allow the pear cardamom bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
Notes
Ensure pears are ripe but still firm for the best texture. Overly mushy pears will add too much moisture.
