Description

A moist, tender cake infused with fresh pears and a thick cinnamon sugar swirl, topped with a sweet vanilla glaze. No yeast required!


Ingredients

3 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 cup whole milk
1/2 cup Greek yogurt
2 teaspoons vanilla extract
2 cups fresh pears, peeled and diced
1 cup brown sugar, packed
2 tablespoons ground cinnamon
1/2 cup unsalted butter, melted (for swirl)
1 cup powdered sugar (for glaze)
2 tablespoons milk (for glaze)


Instructions

Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9x13 inch baking pan.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Step 3: In a separate bowl, mix the softened butter, eggs, milk, Greek yogurt, and vanilla extract until smooth.
Step 4: Gradually add the wet ingredients to the dry ingredients, stirring just until combined (do not overmix).
Step 5: Gently fold in the diced pears until they are evenly distributed through the batter.
Step 6: Spread the batter evenly into the prepared baking pan.
Step 7: In a small bowl, combine the brown sugar, cinnamon, and melted butter. Drop spoonfuls of this mixture over the cake batter and use a knife to swirl it in.
Step 8: Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Step 9: While the cake cools slightly, whisk the powdered sugar and milk together. Drizzle the glaze over the warm cake before serving.

Notes

Using ripe but firm pears like Bosc or Anjou prevents the cake from becoming too soggy.
