Description

A delightful twist on a classic, these pear gingerbread cookies combine the deep warmth of molasses and ginger with the sweet, floral notes of fresh, ripe pears.


Ingredients

1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup unsulphured molasses
1/2 cup very ripe pear, pureed
1 large egg
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup granulated sugar (for rolling)


Instructions

Step 1: In a large bowl, cream together the softened butter and brown sugar until light and fluffy, about 3 minutes.
Step 2: Beat in the egg, molasses, and pear puree until well combined. The mixture may look slightly separated, which is normal.
Step 3: In a separate medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Step 5: Cover the dough and refrigerate for at least 2 hours, or overnight, to allow it to firm up.
Step 6: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Step 7: Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the granulated sugar until coated.
Step 8: Place the balls on the prepared baking sheets about 2 inches apart. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
Step 9: Allow the pear gingerbread cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Ensure pears are very ripe for the best flavor and moisture content. If dough is too sticky after chilling, use lightly floured hands to roll.
