- For the Chicken:
- 1 whole chicken (3-4 pounds), cleaned and spatchcocked or quartered
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Juice of 2 limes
- For the Green Sauce:
- 1 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt (or sour cream)
- 1-2 jalapeños, seeds removed
- 1 tablespoon lime juice
- 2 cloves garlic
- Salt to taste
Instructions
- Marinate the Chicken: Mix olive oil, paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice. Rub all over the chicken and marinate in the refrigerator for at least 1 hour, or overnight.
- Make the Green Sauce: Blend cilantro, mayonnaise, Greek yogurt, jalapeños, lime juice, garlic, and salt until smooth and creamy. Adjust seasoning if needed.
- Grill the Chicken: Preheat grill to medium-high. Grill chicken skin-side down for 15-20 minutes, flip, and grill another 15-20 minutes or until internal temp reaches 165°F.
- Serve: Let chicken rest for a few minutes, then slice and serve with the green sauce drizzled on top or on the side.
Notes
For a vegetarian twist, marinate portobello mushrooms or tofu. Add extra jalapeños for more heat. Store leftovers separately and reheat chicken in the oven; sauce can be served cold.
