Description

Ingredients

  • For the Chicken:
  • 1 whole chicken (3-4 pounds), cleaned and spatchcocked or quartered
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 2 limes
  • For the Green Sauce:
  • 1 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or sour cream)
  • 1-2 jalapeños, seeds removed
  • 1 tablespoon lime juice
  • 2 cloves garlic
  • Salt to taste

Instructions

  1. Marinate the Chicken: Mix olive oil, paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice. Rub all over the chicken and marinate in the refrigerator for at least 1 hour, or overnight.
  2. Make the Green Sauce: Blend cilantro, mayonnaise, Greek yogurt, jalapeños, lime juice, garlic, and salt until smooth and creamy. Adjust seasoning if needed.
  3. Grill the Chicken: Preheat grill to medium-high. Grill chicken skin-side down for 15-20 minutes, flip, and grill another 15-20 minutes or until internal temp reaches 165°F.
  4. Serve: Let chicken rest for a few minutes, then slice and serve with the green sauce drizzled on top or on the side.

Notes

For a vegetarian twist, marinate portobello mushrooms or tofu. Add extra jalapeños for more heat. Store leftovers separately and reheat chicken in the oven; sauce can be served cold.
