  • ½ cup breadcrumbs or almond flour (for keto)
  • 2 eggs, lightly beaten
  • ¼ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup shredded provolone or mozzarella cheese
  • 1 cup chopped onions
  • 1 cup chopped green bell peppers
  • ½ cup chopped mushrooms (optional)
  • 2 cloves garlic, minced
  • 4 slices provolone cheese (for topping)
  • 1 tablespoon oil (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a loaf pan or baking sheet.
  2. Heat oil in skillet over medium heat; sauté onions, bell peppers, and mushrooms for 3-4 minutes until softened. Add garlic and cook 30 seconds more. Remove from heat and cool.
  3. In a large bowl, combine ground beef, breadcrumbs (or almond flour), eggs, milk, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Mix gently until just combined.
  4. Fold in shredded cheese and cooled sautéed vegetables.
  5. Shape mixture into a loaf and place in prepared pan.
  6. Bake for 40-45 minutes until internal temperature reaches 160°F (71°C).
  7. Remove from oven; top with provolone slices and bake 5 more minutes until cheese melts. Optionally broil 1-2 minutes for golden crust.
  8. Let rest 10 minutes before slicing. Serve with mashed potatoes, roasted veggies, or hoagie rolls.

Notes

Use 80/20 ground beef for juiciness. Avoid overmixing to prevent dense texture. Freshly shred cheese for best melt. Let meatloaf rest to retain juices. Customize with almond flour for keto or add jalapeños for spice.
