An easy and adorable heart-shaped cookie sandwich made with classic Pillsbury dough and creamy buttercream frosting.
Ingredients
1 package (16.5 oz) Pillsbury Refrigerated Sugar Cookie Dough
1 cup unsalted butter, softened
3 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
Pink or red food coloring
Valentine's Day sprinkles
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 2: Roll out the Pillsbury sugar cookie dough on a floured surface to 1/4 inch thickness and cut out 24 heart shapes.
Step 3: Place hearts 2 inches apart on the prepared sheets and bake for 9-11 minutes until slightly golden.
Step 4: Transfer to a wire rack and let the cookies cool completely.
Step 5: In a medium bowl, beat softened butter, powdered sugar, cream, and vanilla until light and fluffy. Add food coloring as desired.
Step 6: Pipe frosting onto the flat side of 12 cookies and top with the remaining 12 cookies.
Step 7: Press the edges into sprinkles and let the Pillsbury Heart Cookie Sandwiches set before serving.
Notes
Ensure cookies are completely cooled before frosting to prevent melting. For a flatter cookie, press the dough slightly with the bottom of a glass before baking.
