Description

A moist, golden quick bread bursting with tropical pineapple flavor and a soft, buttery crumb.


Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 can (20 oz) crushed pineapple, well-drained


Instructions

Step 1: Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Step 3: In a medium bowl, whisk the eggs, then add the melted butter and vanilla.
Step 4: Add the wet ingredients to the dry ingredients and stir until just combined.
Step 5: Fold in the drained crushed pineapple gently.
Step 6: Spread the batter into the prepared loaf pan.
Step 7: Bake for 55 minutes or until a tester comes out clean. Cool in pan for 10 minutes before moving to a rack.

Notes

Ensure the pineapple is well-drained to avoid a soggy middle. Adding 1/2 cup of toasted pecans provides a great texture.
