Description

These irresistible bites combine the classic Mississippi pot roast flavors with sweet pineapple and a hint of brown sugar for an easy, crowd-pleasing appetizer perfect for any gathering.


Ingredients

2 (14 ounce) packages mini smoked sausages (Lil' Smokies), drained
1 (20 ounce) can crushed pineapple, undrained
3/4 cup packed light brown sugar
1 (1 ounce) packet dry ranch seasoning mix
1/4 cup butter, cut into pats
2 tablespoons juice from a jar of pepperoncinis
Optional: Whole pepperoncinis for garnish


Instructions

Step 1: Lightly grease the inside of your slow cooker crock, or line it with a slow cooker liner for easy cleanup.
Step 2: Add the drained Lil' Smokies to the slow cooker. Pour in the undrained crushed pineapple. Sprinkle the brown sugar and ranch seasoning mix evenly over the sausages and pineapple. Add the pepperoncini juice. Place the pats of butter on top of the mixture.
Step 3: Cover the slow cooker and cook on LOW for 2-3 hours or on HIGH for 1-1.5 hours, stirring occasionally. The sauce should thicken slightly, and the sausages will be heated through and coated in a beautiful glaze.
Step 4: Once cooked, give it a final stir. Serve warm directly from the slow cooker or transfer to a serving dish. Provide toothpicks for easy grabbing. Garnish with a few whole pepperoncinis if desired.

Notes

These Lil' Smokies can be made ahead of time and reheated. They also taste great served over rice for a simple meal. Adjust brown sugar to your preferred sweetness level.
