Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 cup crushed pineapple, undrained
1 cup sweetened shredded coconut
1/2 cup unsalted butter, melted
2 large eggs
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
Instructions
Step 1: Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
Step 3: In another bowl, mix melted butter, eggs, crushed pineapple (with juice), and vanilla.
Step 4: Combine wet and dry ingredients, stirring until just mixed.
Step 5: Fold in the shredded coconut gently.
Step 6: Bake for 55-65 minutes until a toothpick comes out clean.
Step 7: Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Ensure you use the juice from the canned pineapple for maximum moisture. Do not overmix the batter to keep the crumb light.
