Description

A dense, moist, and tropical Bundt cake featuring the perfect balance of tangy cream cheese and sweet crushed pineapple.


Ingredients

3 cups all-purpose flour
2 cups granulated sugar
8 oz cream cheese, softened
1 cup unsalted butter, softened
4 large eggs
1 can (20 oz) crushed pineapple, well-drained
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp salt


Instructions

Step 1: Preheat your oven to 325°F and grease a 12-cup Bundt pan thoroughly.
Step 2: Cream the butter and cream cheese together until smooth, then add sugar and beat until fluffy.
Step 3: Add eggs one at a time, followed by the vanilla and drained pineapple.
Step 4: Sift in the dry ingredients and mix until just incorporated.
Step 5: Bake for 60-70 minutes until a toothpick comes out clean, then cool in the pan for 15 minutes before inverting.

Notes

Ensure pineapple is very well drained to prevent the cake from becoming too soggy at the bottom.
