3 cups fresh pineapple, cubed
1 large cucumber, peeled and diced
1/4 red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
2 tablespoons fresh lime juice


Instructions

Step 1: Prepare the pineapple by cutting it into bite-sized chunks, ensuring they are large enough to enjoy but small enough to mix easily.
Step 2: Slice the cucumber. You can peel it for a smoother texture or leave the skin on for extra crunch. Cut into thin rounds, then halve them into half-moons.
Step 3: Thinly slice the red onion. If the raw onion flavor is too strong for your preference, soak the slices in cold water for a few minutes to mellow them.
Step 4: Roughly chop the fresh mint leaves to release their aromatic oils, adding a refreshing note to the salad.
Step 5: In a large mixing bowl, combine the prepared pineapple, cucumber, red onion, and chopped mint.
Step 6: Squeeze fresh lime juice over all the ingredients. Gently toss everything together until well combined and the flavors are evenly distributed.
Step 7: For the best flavor and to allow the ingredients to meld, chill the salad in the refrigerator for at least 30 minutes before serving. Enjoy cold!

Notes
