Description
A delightful no-bake dessert featuring a buttery graham cracker crust topped with a light and creamy pineapple-infused filling.
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 (20 ounce) can crushed pineapple, well drained
1 (8 ounce) container frozen whipped topping, thawed
Instructions
Step 1: In a medium bowl, combine graham cracker crumbs and melted butter. Press evenly into the bottom of a 9x13 inch baking pan.
Step 2: In a large bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
Step 3: Gently fold in the well-drained crushed pineapple until just combined.
Step 4: Carefully fold in the thawed whipped topping until no streaks remain. Be gentle to maintain the airy texture.
Step 5: Spread the pineapple mixture evenly over the graham cracker crust in the baking pan.
Step 6: Cover the pan and refrigerate for at least 3 hours, or ideally overnight, until thoroughly chilled and set.
Step 7: Once chilled, slice into bars and serve. Garnish with toasted coconut or fresh mint if desired.
Notes
For an extra tropical twist, sprinkle some toasted shredded coconut on top before serving. Ensure the pineapple is extremely well-drained to prevent a watery filling.
