Description
A vibrant and creamy iced latte made with coconut milk and natural dragon fruit powder for a stunning pink glow.
Ingredients
2 shots espresso (or 1/2 cup strong brewed coffee)
1 cup coconut milk (carton or light canned)
1 tsp pink pitaya (dragon fruit) powder
1 tbsp maple syrup or sweetener of choice
1/2 tsp vanilla extract
1 cup ice cubes
Instructions
Step 1: Brew your espresso or strong coffee and set it aside to cool slightly.
Step 2: In a small jar, combine the coconut milk, pitaya powder, sweetener, and vanilla. Froth with a handheld milk frother until pink and bubbly.
Step 3: Fill a tall serving glass with ice.
Step 4: Pour the frothed pink coconut milk over the ice.
Step 5: Gently pour the espresso over the top, ideally using the back of a spoon to create layers.
Step 6: Stir gently before drinking and enjoy your Pink Coconut Iced Latte!
Notes
Use high-quality freeze-dried pitaya powder for the brightest color. If using canned coconut milk, shake well before measuring.
