A light, airy, and creamy pink gelatin diet recipe made with sugar-free strawberry gelatin and protein-packed Greek yogurt.
Ingredients
1 package (0.3 oz) Sugar-Free Strawberry Gelatin
1 cup Boiling Water
1 cup Cold Water
1 cup Non-fat Plain Greek Yogurt
1/2 cup Sliced Fresh Strawberries (optional)
Instructions
Step 1: In a medium mixing bowl, combine the sugar-free strawberry gelatin and the boiling water.
Step 2: Stir the mixture for at least 2 minutes until the gelatin is completely dissolved.
Step 3: Pour in the cold water and stir briefly to combine.
Step 4: Place the bowl in the refrigerator for 20-30 minutes, or until the gelatin starts to thicken slightly (consistency of unbeaten egg whites).
Step 5: Remove from the fridge and whisk in the Greek yogurt until the mixture is smooth and light pink.
Step 6: Fold in fresh strawberries if using, then pour the pink gelatin diet recipe into individual serving dishes.
Step 7: Refrigerate for at least 4 hours or until completely set before serving.
Notes
For a thicker mousse, use less cold water. Ensure the yogurt is at room temperature for smoother mixing.
