Description

Thick, soft, and naturally festive cookies loaded with chopped pistachios and dark chocolate chunks.


Ingredients

1 cup unsalted butter, softened
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp sea salt
1 cup shelled pistachios, finely chopped
1 1/2 cups dark chocolate chunks
1 drop green food coloring (optional)


Instructions

Step 1: Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2: Cream butter and sugars until fluffy.
Step 3: Beat in eggs, vanilla, and food coloring.
Step 4: Whisk together flour, baking soda, and salt.
Step 5: Mix dry ingredients into wet until just combined.
Step 6: Fold in pistachios and chocolate chunks.
Step 7: Scoop onto pans and bake for 10-12 minutes.
Step 8: Cool on the pan for 5 minutes before moving to a rack.

Chill the dough for 30 minutes to ensure a thicker, softer cookie texture.
