Ingredients
1 cup all-purpose flour
1 tablespoon granulated sugar
1 pinch salt
1 cup whole milk
3/4 cup sparkling water
2 large eggs
4 tablespoons vegetable oil
1 cup farmer's cheese (Twaróg)
1 large egg yolk
2 tablespoons granulated sugar (for filling)
1 teaspoon vanilla extract
Instructions
Step 1: Whisk the flour, sugar, and salt in a bowl, then gradually mix in the milk and eggs until smooth.
Step 2: Incorporate the sparkling water and oil into the batter and let it rest for 30 minutes.
Step 3: Prepare the cheese filling by mixing farmer's cheese, sugar, egg yolk, and vanilla.
Step 4: Fry thin layers of batter in a hot skillet for 1-2 minutes per side until golden.
Step 5: Fill each crepe with the cheese mixture and roll or fold as desired.
Step 6: Optionally pan-fry the filled crepes in butter for a crispy finish.
Notes
Always use sparkling water for the lightest texture. If the batter is too thick, add a tablespoon more water.
