Description

A fudgy and aromatic autumn dessert featuring the warm notes of pumpkin puree combined with the bright, citrusy punch of fresh orange zest.

Ingredients

Scale

1 cup unsalted butter, melted and cooled
1 cup light brown sugar, packed
1/2 cup granulated sugar
1/2 cup pumpkin puree (not pie filling)
1 large egg
2 tablespoons fresh orange zest
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup white chocolate chips (optional)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined and smooth.
Step 3: Add the pumpkin puree, egg, orange zest, and vanilla extract to the butter mixture. Whisk vigorously until the batter for your pumpkin and orange zest blondies is fully emulsified.
Step 4: In a separate medium bowl, sift together the flour, cinnamon, ginger, cloves, and salt.
Step 5: Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix until just combined, ensuring you don't overwork the batter for the pumpkin and orange zest blondies.
Step 6: If using, fold in the white chocolate chips. Spread the batter evenly into the prepared baking pan.
Step 7: Bake for 28-32 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
Step 8: Allow the pumpkin and orange zest blondies to cool completely in the pan before lifting them out and slicing into squares.

Notes

For the best flavor, let the blondies sit for a few hours after cooling; the orange flavor intensifies over time.
