A decadent and flavorful French toast recipe featuring thick brioche slices soaked in a rich pumpkin and spice custard, pan-fried to golden perfection.
Ingredients
8 thick slices of brioche or challah bread
4 large eggs
1 cup milk
1/2 cup pumpkin puree
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Butter, for frying
Maple syrup, whipped cream, and powdered sugar for serving
Instructions
Step 1: In a shallow dish or pie plate, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, ground cinnamon, and ground nutmeg until well combined and smooth.
Step 2: Heat a large non-stick skillet or griddle over medium heat. Add about a tablespoon of butter, letting it melt and coat the pan.
Step 3: Dip each slice of brioche bread into the pumpkin mixture, allowing it to soak for about 15-30 seconds per side. You want the bread to be coated but not completely saturated.
Step 4: Place the soaked bread slices onto the hot, buttered skillet. Cook for 3-4 minutes per side, or until golden brown and cooked through. Add more butter to the pan as needed between batches.
Step 5: Transfer the cooked French toast to plates. Serve immediately with warm maple syrup, a generous dollop of whipped cream, and a dusting of powdered sugar.
Notes
For an extra kick, add a pinch of ground ginger or cloves to the batter. You can also make the custard ahead of time and store it in the refrigerator for up to 24 hours.
