A pillowy, spiced cookie that tastes exactly like a pumpkin chai latte in solid form, topped with a sweet maple glaze.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup pumpkin puree (blotted)
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cardamom
1/4 tsp ground cloves
1/2 tsp salt
1/2 cup powdered sugar (for glaze)
1 tbsp maple syrup
1 tbsp milk
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
Step 2: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Step 3: Beat in the blotted pumpkin puree, egg, and vanilla extract until well combined.
Step 4: In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, cardamom, cloves, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Scoop rounded tablespoons of dough onto the prepared baking sheets, spaced 2 inches apart.
Step 7: Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the pan for 5 minutes before moving to a wire rack.
Step 8: Whisk the powdered sugar, maple syrup, and milk to create a glaze, then drizzle over the cooled cookies.
Notes
Ensure you blot the pumpkin puree with paper towels to remove excess moisture for the best cookie texture.
