Description

A delightful blend of earthy pumpkin and bright citrus, these soft and chewy cookies are the ultimate autumn treat.


Ingredients

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup pumpkin puree, blotted
1 large egg
1 tsp vanilla extract
1 tbsp fresh orange zest
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp salt


Instructions

Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper to prevent the pumpkin orange zest cookies from sticking.
Step 2: Using paper towels, blot the 1/2 cup of pumpkin puree until it is thick and much of the water has been absorbed; this is the key to chewy pumpkin orange zest cookies.
